- 3 cups old-fashioned oats
- 1 cup raw cashews
- 1 cup raw almonds
- 1 cup hazelnuts

- 1/2 teaspoon nutmeg
- 1/2 teaspoon sea salt
- 1/2 cup pure maple syrup
- 1/4 cup coconut oil (or canola oil)
- 2 tablespoons molasses
- 1 teaspoon vanilla extract
- 1 cup dried goji berries
- 2/3 cup butterscotch morsels

How to Make It
Step 1
Preheat oven to 325°F. Lightly coat a sheet pan with nonstick cooking spray.
Step 2
In a large bowl, add dry ingredients; oats through salt. Toss to combine. Set aside.
Step 3
Heat maple syrup, coconut oil, and molasses in a small saucepan over medium-low. Once coconut oil is melted, remove from heat and stir in vanilla extract.
Step 4
Pour wet ingredients into dry. Spread evenly on prepared sheet pan.
Step 5
Bake for 30-35 minutes, tossing once halfway through, until golden brown and toasted. Allow to cool completely (about 1 hour) before mixing in goji berries and butterscotch morsels. Store in an airtight container at room temperature.
